Family Owned Bagel and Coffee Shop Proposed for Cambridge Street Plaza

By: Rich Hosford

There could soon be a new, locally owned, place to grab a bagel, breakfast sandwich or a cup of coffee in Burlington.

The Planning Board on Thursday night will take up a special permit application for The Bagel Bar at 286 Cambridge Street. The breakfast restaurant, if approved, will be located in the same plaza as Olde Towne Liquors and will be owned and operated by the same owners, the Toulopouos family, who say there is a need for this type of establishment in that part of town.

“Our concept of serving freshly (off-site) baked bagels and locally roasted coffee will satisfy a strong demand for this side of the town,” Michael Toulopouos wrote in a letter included with the application. “We have already contracted with a local, well established and well known baker for the bagels. Our goal is to serve fresh, toasted bagels and bagel sandwiches for breakfast and lunch as well as provide a wide variety of Gluten Free options. We will provide fresh ground coffee, espresso drinks (both hot and iced) from a local roaster.”

The restaurant plans to be open from 6 a.m. to 3 p.m. daily and will have 12 seats for indoor dining though the theory is most customers will take their orders to go. The menu has a variety of bagels ranging from stapes like plain, everything, onion and cinnamon raisin to more unique offerings including sea salt, sundried tomato and three cheese Italian. There are also a variety of breakfast sandwiches and bagel toasts.

The owners say they are hoping for a favorable vote from the Planning Board and are excited to begin this new endeavor.

“We as a family have been operating Olde Towne Liquors since 2002 (now located in this plaza) and look forward to starting a new and exciting venture within the town,” Toulopouos wrote. “We know that our experience in the customer service driven retail industry as well as our restaurant experience (Newtowne Grille in Cambridge and Billerica) affords us the opportunity to understanding and satisfying not only the demands of the Burlington public but also the requirements of the town's departments. All while stressing and maintaining the highest level of food safety amongst our staff.”
